Surprisingly Sensational Spring Salad

Spring Salad

Ingredients:

Spring mix (You can buy it pre-made at the store made by Fresh Express)

1 chopped red onion

1 small package of goat cheese

7-10 strawberries halved

1 pear thinly sliced (Any kind will do)

½ cup crushed walnuts (it’s easy to crush them yourself!)

Salt (to taste)

Pepper (to taste)

Olive oil (to taste)

Raspberry (or any other fruity vinaigrette)

2 grilled chicken breasts

This salad is refreshingly light, really healthy and still manages to taste great. It’s also quick and simple to make and can complement any meal well!

First cut some chicken into strips and grill or sauté them on the stove. While the chicken is cooking you can cut up the strawberries, pears and onion. Once everything is chopped, rinse the lettuce and start making your salad! Top with the goat cheese, add some Raspberry vinaigrette and enjoy!
